Chicken soup is one of the most easiest dish you can cook at home. I consider it a no fail dish since it requires minimal work and no technical skills required.
I called my chicken soup recipe a lazy comfort food :D. Sometimes I just want to make something fast and easy comforting food. Chicken soup is always my go to dish especially in a cold weather.
On this recipe I used leftover rotisserie chicken ( nothing goes to waste. :D) but you can use any kind of meat. Also, I didn't throw the bones right away I made a stock out from it to get the most flavor. I just boiled water with the bones for 30 mins then discard the chicken bones. I mix then the stock with good quality canned chicken broth to enhance the flavor. It may sounds like a bit tedious but trust me this extra step is worth it!
Ok let's start cooking! Below is the recipe for my lazy yet delicious and comforting chicken soup.
3 tbsp cooking oil
1 thumb sized ginger, julienne cut
1 white onion, sliced lengthwise
1 carrot, sliced thinly
1 celery, sliced thinly
2 cups shredded leftover rotisserie chicken
2 cans 14 oz chicken broth
1 cup homemade chicken stock or water
4 tbsp. fish sauce (patis)
1 spring onion, chopped
100 grams cabbage, thinly chopped
Salt and pepper to taste
1 tbsp fried garlic (optional)
